Who says you can't have spaghetti??
Before starting the LC/Keto lifestyle I LOVED pasta. And quite frequently spaghetti was my go-to meal because it was fast and simple. I was a little sad that I could no longer enjoy the hearty, carb filled dish (or any other pasta dish). But here is where determination comes into play. As I stated before, I was sure I could continue eating things I loved with some modifications.
I was perusing one of the FB groups I'm in for Low Carb/Keto and someone had posted a picture of their dinner. Spaghetti with sauce and meatballs. Upon further investigation I saw in the comments she used Spaghetti Squash! I won't lie.... I would have never tried it under any other circumstances. But one of the fun things of a new lifestyle is pushing yourself to try new things. So I set out to find this squash and learn how to make it.

I'm going to make myself sound real stupid, but I read a ton of stuff on how to cook spaghetti squash and it was so easy that it sounded super complicated in my head. Have you ever done that?? Something has a total of like 4 or 5 steps, like shit a toddler could do, and you overthink every single step?! So this is why I'm going to tell you exactly how I do it:
1. Stab some holes in the spaghetti squash with a fork
2. Microwave for 5 minutes
3. Cut in half and clean out guts (seeds and shit)
4. Rub inside with Olive Oil (EVOO) and season with salt and pepper (I also add Garlic Powder)
5. Place on a lined cookie sheet, inside facing down
6. Bake in a 350 degree oven for 50 minutes
7. Pull out, let cool, then shred insides with a fork. DONE ✔
I will then take the excess, since I'm the only one who really eats it, and put it in a container and keep in the fridge.
NOW.... you can put on top or mix with whatever you want. Spaghetti sauce and meatballs. Alfredo sauce. Whatever tickles your tongue. One of my favorite things to pair with the spaghetti squash is Buffalo Chicken Dip. And if you think I take a ton of time making it.... WRONG! 5 Minutes and that shit is done and ready to fill my mouth with hot deliciousness.
My Buffalo Chicken Dip:
2 Cans Chicken
1 8oz block Cream Cheese
1 Cup Ranch dressing
1/2 Cup (More or less depending on your taste) Red Hot
→ Microwave for 4 minutes and stir until mixed completely
Add 1 handful Shredded Cheddar Cheese
Add 1/2 Cup crumbled bacon
→ Mix and Done
