Try not to eat em' all LC Meatballs
Ok. So one of the things I made Low Carb right away was some meatballs. I didn't really make meatballs much before that. I bought already made ones in the meat section, not the frozen because those are gross and always taste funny. But I didn't buy those very often. I don't know why, honestly.
Anyway, my husband came home from a work party and was raving over this guy's meatballs. He even got the recipe from him for me to make them. As I looked over the recipe the only thing I noticed that was different from regular meatballs was that he added shredded cheddar cheese. So I began making these meatballs. And then I went low carb. Well, of course the only thing that needed changing was instead of breadcrumbs I use almond flour. Super simple. It's the exact same thing I do for meatloaf.
Well I went to make meatballs one day and I didn't have enough hamburger meat to make the amount of meatballs I would need. So for the right amount of meat I added some ground pork. EUREKA!!! These balls of meat were AMAZING!!! And here's the kicker, everyone raves about them! I made like 4 dozen to freeze and my family ate them in a week. Even the kid who hates cheese (I have yet to let her know there is some in these meatballs 😂).
So let me explain how to make these balls of deliciousness:
Ingredients:
2 lbs Hamburger Meat
2 lbs Ground Pork
2 Eggs
1 Cup Almond Flour
1 Cup Shredded Mild Cheddar Cheese
Salt, Pepper, Garlic Powder, etc. to taste.
Directions:
Preheat oven to 350℉
Mix all ingredients in a bowl
Line a cookie sheet with parchment paper (I've also used aluminum foil and sprayed it with non-stick spray).
I use a TBSP measuring spoon to scoop out the meat so they are relatively all the same size. I roll them in my hands and place on the lined sheets about 1/2 an inch apart.
Bake for a total of 25-30 minutes. I switched the pans halfway through so the bottoms didn't burn. Be careful because they can get dry easily. But them I pull them out and let them sit for about 5 minutes before serving.
How you serve them is completely up to you. Most of the time I put them in a crockpot with spaghetti sauce on low to keep them warm. This day, we were eating them immediately so I just had some spaghetti sauce off to the side. Which actually worked out perfectly as both my daughters and the extra child always at my house told me they all prefer no sauce. Live and learn. I, on the other hand, love them in sauce and with cheese.
Of course, being LC/Keto, I do not put them in a hoagie bun. Most of the time I wrap them in a LC Tortilla Wrap (Check out previous posts I've shared them in). But I just didn't want that this day. I wanted simple. Not too heavy of a meal. So I just put them on my plate, spooned some sauce on them and put a piece of cheese overtop. Then I used the microwave to melt the cheese. For a side I pan fried some slices of zucchini and yellow squash in butter and seasoned them with salt, pepper, ranch seasoning, and cajun seasoning.
I really hope you give this recipe a shot. Like I stated above, my kids and husband actually prefer these to regular meatballs. And if you do try it, please give me some feedback. I love to know what everyone thinks and if you made any changes what they were.
