Philly Cheese Steak ZBoats

I don't care who you are or what you say, Philly Cheese Steak is awesome.  I love it.  And it is so easy to make.  Usually when I make them I would just stuff the greasy meat in my LC tortilla wraps.  (Seriously, those things are awesome and perfect for replacing the bun or bread on any sandwich or burger.)

Any way.... So I was on Facebook (SHOCKER!) and this video came up for Italian Zucchini Boats.  Of course I made the recipe and it was pretty tasty.

So here I am craving some philly cheesesteaks when an idea comes to me.... what if I put the philly steak in zucchini boats!?! So that is what I set out to do.  And can I just mention how much I love first tries turning out to be complete successes??  Because this was one of those times.  Who am I to deny anyone else this delicious success?

PHILLY STEAK ZUCCHINI BOATS

Ingredients:
2 Zucchinis
1 14oz box Philly Steak (I normally use Great Value but they were out so used Steak-Ums for this)
1/2 Small Onion diced (Optional)
4 TBSP Butter
Shredded Mozzarella Cheese
Salt and Pepper to taste

Instructions:
Preheat oven to 350℉
Slice zucchini in half and scoop out center to make boats, set center aside.
Put boats in an 8x8 baking dish and season with salt and pepper.
Microwave boats for 5 minutes on high (This helps soften them so you don't have to bake for too long).
In a skillet cook philly steak, diced onions, and the center of the zucchinis until meat is fully cooked.
Scoop meat mix into zucchini boats and top with shredded mozzarella cheese.
Slice better into TBSPs and put at the bottom of the baking dish.
Bake in oven for 20 - 25 minutes.
Let cool for a few minutes and serve.

  

Oh man, how good does that look?!?!  And let me tell you, I've made this for other people and they absolutely love it.  It's really not that hard.  I'd say it take around 30-35 minutes max to make.  So it's perfect for supper after work when you don't feel like doing a bunch of cooking, because I know that's my mood most days.

Honestly, there are so many things that can go in zucchini boats.  Buffalo Chicken.  Tuna Melts. Sloppy Joes.  Taco meat and salsa.  Chicken Enchilada meat and sauce.  Bacon cheeseburger.  The possibilities are endless!!  And delicious.  As in, I know what I'm adding to my menu this week!!
