Cold Brew at Home? Heck Yea!

Image
If you read my post on bulletproof coffee, you know that I am a HUGE coffee lover.  I could drink it all day (and I have before).  But when it came to drinking cold coffee I immediately gagged to myself.  I know the times I took too long to drink my hot cup and it turned cold I would spit it back out.  So I could not understand why everyone was so infatuated with getting iced coffee at Dunkin' Donuts (or Starbucks if that's in your area).  Seemed gross to me. Then someone explained that it was just coffee with ice thrown in it.  It was brewed COLD.  I was still skeptical.  Sounded completely weird to me.  But one day I was at Dunkin' and thought "what the hell".  So I got one, regular creamer and sugar free caramel flavor.  Just a heads up.... Dunkin's sugar free flavors are NOT.... I repeat NOT...sweet at all!  So I had to use my packets of Stevia I carry with me to sweeten it.  Kind of annoying. Enter Sheetz.... If you live near Western PA you know what

Who says you can't have spaghetti??

Before starting the LC/Keto lifestyle I LOVED pasta.  And quite frequently spaghetti was my go-to meal because it was fast and simple.  I was a little sad that I could no longer enjoy the hearty, carb filled dish (or any other pasta dish).  But here is where determination comes into play.  As I stated before, I was sure I could continue eating things I loved with some modifications. I was perusing one of the FB groups I'm in for Low Carb/Keto and someone had posted a picture of their dinner.  Spaghetti with sauce and meatballs.  Upon further investigation I saw in the comments she used Spaghetti Squash!  I won't lie.... I would have never tried it under any other circumstances.  But one of the fun things of a new lifestyle is pushing yourself to try new things.  So I set out to find this squash and learn how to make it. Enter Pinterest here.... I'm going to make myself sound real stupid, but I read a ton of stuff on how to cook spaghetti squash and it was so easy that

My POV on BPC

If you're a low-carber you get it.  If you're not then I'll let you in on the secret.... BPC = Bulletproof Coffee.   Now I'm sure you've read articles and blogs on how amazing this stuff it.  It's a staple to the LCHF/KETO lifestyle.  It provides nutrition and helps make sure you get enough good fat intake for the day.  It is so filling that it is really all you need in the morning.  Not to mention it really does give you a boost of energy. If you really want the breakdown on ALL of the nutritional benefits, then read this article: What is Bulletproof Coffee + The Benefits of Grass-Fed Butter & Coconut Oil in Your Coffee Basically, BPC is coffee with a tablespoon of grass-fed unsalted butter (I use Kerrygold, like many others) and a tablespoon of Coconut Oil (or MCT oil).  And because coffee is water base and the other are oils you cannot simply put them together and mix with a spoon or fork (right, Bam? 😉).  This will need to be blended in a b

Who says you can't satisfy that sweet tooth?

If any of you knew me before I started this way of eating then you know how much I LOVED dessert.  Chocolate🍫.  Cake🎂.  Cookies🍪.  Ice Cream🍦.  It was just as much a staple to me as was meat.  Definitely ranked higher than veggies.  I needed something sweet daily.  I'm talking I would sit at home and eat a spoonful of Nesquik to curb my sweet tooth.  #NoShame! So I, like many others, was concerned how I would get through not being able to have anything sweet since sugar has no place in the Low Carb/Keto world.  Well thankfully I am no quitter.  I will find my way around ANYTHING that stand in my way of what I want.  And what I wanted was to be able to have something sweet after dinner. Remember those links I posted in my first blog post pointing to the FB groups I was apart of?  Utilize those!  There are people in there who have been eating this way for years.  Tons and tons of ideas. Another helpful tool.... Pinterest!  So many recipes and options.  I LOVE Pinterest!!
