Philly Cheese Steak ZBoats

I don't care who you are or what you say, Philly Cheese Steak is awesome.  I love it.  And it is so easy to make.  Usually when I make them I would just stuff the greasy meat in my LC tortilla wraps.  (Seriously, those things are awesome and perfect for replacing the bun or bread on any sandwich or burger.) Any way.... So I was on Facebook (SHOCKER!) and this video came up for Italian Zucchini Boats .  Of course I made the recipe and it was pretty tasty. So here I am craving some philly cheesesteaks when an idea comes to me.... what if I put the philly steak in zucchini boats!?! So that is what I set out to do.  And can I just mention how much I love first tries turning out to be complete successes??  Because this was one of those times.  Who am I to deny anyone else this delicious success? Ok.  So one of the things I made Low Carb right away was some meatballs.  I didn't really make meatballs much before that.  I bought already made ones in the meat section, not the frozen because those are gross and always taste funny.  But I didn't buy those very often.  I don't know why, honestly. Anyway, my husband came home from a work party and was raving over this guy's meatballs.  He even got the recipe from him for me to make them.  As I looked over the recipe the only thing I noticed that was different from regular meatballs was that he added shredded cheddar cheese.  So I began making these meatballs.  And then I went low carb.  Well, of course the only thing that needed changing was instead of breadcrumbs I use almond flour.  Super simple.  It's the exact same thing I do for meatloaf. As a Low Carber for the past year, one of the hardest situations I've come across is being at a get-together that has chips and dip and not being able to really snack on any of it. I LOVE buffalo chicken dip and pepperoni dip and spinach dip.  And honestly, most of those are low carb/keto friendly.  But do you know how weird it feels eating dip with a spoon???  Oh yes, I do know! So for a recent party I offered to make the buffalo chicken dip.  I made up my mind I was going to make some LC chips for me to enjoy the dip.  I decided I was going to make two different kinds, so I looked in my cupboard for some spices.  The first one I grabbed was garlic pepper seasoning.  The second I grabbed was Ranch seasoning (I have a big container) and then I eyed the cajun seasoning and thought they would go well together. Super Delicious Z-Fries

So the other night I made burgers.  And of course, with burger I made french fries.... for everyone else, of course.  Ya know, since I'm LC and not eating starch or anything too carby. So I made myself some zucchini fries.  I honestly could eat these on the daily for the rest of my life. Thankfully, I have a friend who has a friend who has a garden.  She gave me a couple of zucchinis her garden friend gave her.  Have you ever had zucchini from a home garden??  They are GINORMOUS.  No lie.  Store bought zucchini pales in comparison to home grown (not to mention zero pesticides).  Guess who will be starting her own garden next spring???  This girl!! Anyway... So I basically just threw this together.  I've looked at multiple recipes so I had a good idea what to do.  And with my trusty air fryer these were cooked to perfection. Cold Brew at Home? Heck Yea!

If you read my post on bulletproof coffee, you know that I am a HUGE coffee lover.  I could drink it all day (and I have before).  But when it came to drinking cold coffee I immediately gagged to myself.  I know the times I took too long to drink my hot cup and it turned cold I would spit it back out.  So I could not understand why everyone was so infatuated with getting iced coffee at Dunkin' Donuts (or Starbucks if that's in your area).  Seemed gross to me. Then someone explained that it was just coffee with ice thrown in it.  It was brewed COLD.  I was still skeptical.  Sounded completely weird to me.  But one day I was at Dunkin' and thought "what the hell".  So I got one, regular creamer and sugar free caramel flavor.  Just a heads up.... Dunkin's sugar free flavors are NOT.... I repeat NOT...sweet at all!  So I had to use my packets of Stevia I carry with me to sweeten it.  Kind of annoying. Enter Sheetz.... Before starting the LC/Keto lifestyle I LOVED pasta.  And quite frequently spaghetti was my go-to meal because it was fast and simple.  I was a little sad that I could no longer enjoy the hearty, carb filled dish (or any other pasta dish).  But here is where determination comes into play.  As I stated before, I was sure I could continue eating things I loved with some modifications. I was perusing one of the FB groups I'm in for Low Carb/Keto and someone had posted a picture of their dinner.  Spaghetti with sauce and meatballs.  Upon further investigation I saw in the comments she used Spaghetti Squash!  I won't lie.... My POV on BPC

If you're a low-carber you get it.  If you're not then I'll let you in on the secret.... BPC = Bulletproof Coffee.   Now I'm sure you've read articles and blogs on how amazing this stuff it.  It's a staple to the LCHF/KETO lifestyle.  It provides nutrition and helps make sure you get enough good fat intake for the day.  It is so filling that it is really all you need in the morning.  Not to mention it really does give you a boost of energy.
